Homemade Granola Bars



I love granola but many times I can't eat it due to the almonds (sad, I know).   But one day my friend brought me some yummy bars as a thank you treat.   I had enough to share one with every member of my family but due to their complete and total yumminess I sat and ate them all myself. 

I wanted to share this recipe with you today.
They don't have a name so I have nicknamed this recipe.

Yummi-ola Bars
aka Granola Bars
Dry Ingredients:
1 cup oatmeal
1/2 cup ground flax
1 cup crushed graham crackers
Optional ingredients:
1/2 cup rasins or craisins*
1/2 cup sunflower seeds
1/2 cup coconut
1/2 cup mini chocolate chips*
Wet Ingredients:
1/4 to 1/2 cup butter
3.5 to 4.5 cups mini marshmallows 
(if you use more of the optional ingredients you will need the higher number of wet ingredients)

Mix all dry ingredients together (except chocolate chips)
In sauce pan melt butter and marshmallows until smooth.
Take off heat and pour into the dry ingredients and mix.
My Little Guy loves them!!
 the dough has cooled a bit (but not set) mix in the chocolate chips and then press the dough into a greased 8x8 pan and let set.  (I will usually put it in the freezer for a bit to help it set faster.)
Cut and Enjoy!
These are great to use as gift.
*my favorite optional ingredients.   If you don't have graham crackers Honey Nut Cheerios work great!
